Fire and wine are on display nightly at Sybaris, a Northwest Eclectic Bistro in Historic Downtown Albany. The large fireplace is the centerpiece of the room -- a tall stack of wood always at the ready. Cross your fingers that you're seated at a nearby table, though there's not a bad seat in the house. A friendly staff makes you feel instantly welcome in the historic building with exposed brick walls.
With an extensive Northwest centered wine list, you're sure to find the perfect bottle to complement a dinner menu that changes monthly. The menu is built to take advantage of the freshest, most local ingredients available. Owner/Chef Matt Bennett buys directly from local farms.
"Here in Albany, we're lucky enough to have many farmers and ranchers within a mile or so of the restaurant who sell to top Portland restaurants - so I like to think that I get first pick," Bennett said. "You will not get a tomato in January, nor will you get salmon once the wild Chinook are done for the year."
